Cooking recipe for basic Falafel Sandwich:
● Chickpeas – 200 g;
● Water – 900 ml,
● Onion – 1 piece,
● Garlic – 4 cloves,
● Greens-100 g,
● Flour – 50 g;
● Salt-10 g,
● Baking soda – 5 g,
● Ground black pepper-3 g,
● Crushed red pepper – 3 g;
● Paprika – 3 g;
● Curry – 0.5 tsp,
● Ground coriander-10 g;
● Sunflower oil – 100 ml.
Sandwich Preparation Method:
We sort chickpeas before cooking. We do this so as not to avoid unpleasant inclusions in the finished dish. Next,chickpeas are washed and filled with water,after which they must be left for 10-12 hours, or overnight, for them to swell. If after the chickpeas swell, there is excess liquid.
Then, we wash and grind the chickpeas in a blender into a paste until smooth.Onions and garlic should be cut into relatively large pieces and crushed into tiny grains, and the greens should be cut with a knife or simply torn into small pieces.
Next, chickpeas, garlic-onion mixture, and herbs are transferred to a separate container and mixed until smooth. Then, we add all the prepared spices and mix them in the same mass. Also, our staff add a couple of tablespoons of cool water and baking soda to the resulting mixture and let it brew in the covered state for about half an hour.
After the paste is infused, it is necessary to add flour and knead thoroughly. Finally, the mixture is ready for final deep-frying or frying in a pan.Wetting their hands with water, our staff make small balls that fit in the palm of their hands.
As all the balls are ready, they warm up the deep-frying pan or frying pan, pour in sunflower oil, and fry the bun until golden brown on a small fire to cook from the inside properly. They also bake the balls in the oven at 180-200°C. Then, we finally convert them into sandwiches and serve them to customers.
